Not all cow’s milk is created equal. The difference lies in a small but significant variation in a milk protein called β-casein. Most milk contains either the A1 or A2 variant of this protein, each processed differently in the human body. 

A1 β-casein has been associated with the production of beta-casomorphin-7 (BCM-7) during digestion, a bioactive peptide that may impact gastrointestinal health.

A2 milk, on the other hand, contains only A2 β-casein, which lacks this component due to its genetic structure.
